Lemon Butter Recipe (using the microwave)

           LEMON BUTTER 

125grm Butter
1cup Caster Sugar
Zest of 1-2 Lemons finely grated
4 Eggs
2/3 cup Lemon Juice
              METHOD

Place butter and caster sugar into microwave safe bowl and
microwave on High for 2 minutes.
Add lemon zest and stir well.

In a separate bowl, beat 4 eggs and add lemon juice. Mix well.

Then strain egg mixture into hot butter mixture and whisk quickly to combine.

Microwave on High for 2 minutes. Take out and whisk madly....and then microwave again for a further 1-2 minutes.

Whisk again and leave to cool completely. Stirring occasionally to prevent skin forming.

Store lemon Butter in an airtight container and refrigerate.
It will last for 2 weeks or longer.

This is a very easy recipe and the results are amazing.
You can spread it on bread, biscuits or make lemon meringue pie.

Inner West Magazine

That Vintage Shop + more


Walking up Enmore Road, heading to Newtown for lunch, I recently discovered the treasure trove that is That Vintage Shop.  Located on Enmore Road (right across from Enmore Park and the new Annette Kellerman Aquatic Centre), That Vintage Shop is vintage plus a whole lot more. It is an eclectic mix of furniture, accessories, chandeliers, bird cages, kitchen utensils, artwork and door handles. It is a massive store (by inner west standards) and the owners haven’t wasted an inch of space.
I love stores that are jam packed full of goodies because you never know what you might find as you wander down the aisles and rummage through the shelves. As always I couldn’t resist making a purchase – a very cool wooden coat rack that now lives in my hallway. There are sale signs in their windows, so pop in and grab a bargain.
