LEMON BUTTER 125grm Butter 1cup Caster Sugar Zest of 1-2 Lemons finely grated 4 Eggs 2/3 cup Lemon Juice METHOD Place butter and caster sugar into microwave safe bowl and microwave on High for 2 minutes. Add lemon zest and stir well. In a separate bowl, beat 4 eggs and add lemon juice. Mix well. Then strain egg mixture into hot butter mixture and whisk quickly to combine. Microwave on High for 2 minutes. Take out and whisk madly....and then microwave again for a further 1-2 minutes. Whisk again and leave to cool completely. Stirring occasionally to prevent skin forming. Store lemon Butter in an airtight container and refrigerate. It will last for 2 weeks or longer. This is a very easy recipe and the results are amazing. | ||
